Breakfast of Champions

Rise and shine people! You know what time it is… breakfast time. We’re dreaming of a tall stack of heaven with lots of color…so Cake Batter Pancakes it is!

Talk about decadent, colorful and not to mention, completely satisfying. Perfect for you and all your friends after a sleepover party, this recipe combines the joys of baking a cake with the best Saturday morning activity, pancake making. Ingredients:

-1 cup of Buttermilk Pancake Mix from Arrowhead Mills (or any other pancake mix you prefer)

-1 cup of Confetti Cake Mix (we used Duncan Hines)

-1 cup of milk

-1 teaspoon of vanilla

-2 eggs

-1 tablespoon of canola oil

-Rainbow sprinkles

Note: makes about seven 3 1/2-4 inch pancakes

To assemble:

– Grease griddle and set at about 375ºF

-Pour cake powder mix AND pancake powder mix into medium bowl

-Add 1 cup of milk, 1 teaspoon of vanilla, 2 eggs, and 1 tablespoon of canola oil to cake mix

-Stir until consistent throughout (avoid chunks)

-Pour an endless amount of rainbow sprinkles 🙂

– Stir

-After griddle is heated, pour pancake mix to fulfill desired pancake size onto griddle. (We made our pancakes about 3 1/2 – 4 inches in size)

-Cook like normal pancakes! (Until pancake is golden brown)

-Stack and serve (with whipped cream, syrup, icing, or any topping!)
